Location and Growth Variables
Biotope
Gathered in the high-altitude ecosystems of the Himalayan range, between 2,500 and 3,500 meters. The soil, enriched by decomposing forest biomass and irrigated by glacial meltwater, encourages slow growth and a minerality fixed in the tissues.
Harvest
Gathered by hand after the snowmelt. The mushroom's rarity stems from its dependence on the specific climatic cycles of altitude, limiting the harvest to a few weeks each year.
Technical Data and Processing
A process of controlled natural dehydration. Removing the water concentrates the aroma precursors and stabilizes the proteins. This mechanical process transforms the cellular structure, making the walls more receptive to later rehydration.
Rigorous sorting of specimens according to their structural integrity. The honeycombed cavities of the cap must be deep and intact to maximize the exchange surface during infusion or cooking.
A high concentration of amino acids and volatile sulphur compounds, responsible for the characteristic olfactory intensity of high-altitude morels.
Organoleptic Characteristics

MouthfeelOnce rehydrated, the texture is fleshy, firm and elastic. The honeycombed structure holds sauces and cooking juices, creating a gradual release of flavors.

Aromatic SpectrumA profile dominated by woody top notes and damp forest floor. The heart reveals nuances of roasted hazelnut and smoky accents, resulting from the concentration of organic compounds during drying.

PersistenceLength on the palate marked by a pronounced umami imprint, characteristic of woodland mushrooms grown in the wild.
Brewing Parameters
Rehydration: Immerse in warm water (around 40°C) for 30 to 60 minutes. The soaking liquid, saturated with aromatic molecules, should be strained and used as a base for sauces to retain the full organoleptic profile.
Cooking: Requires thorough, prolonged cooking (a minimum of 15 minutes) to eliminate the heat-sensitive toxins naturally present in fresh morels and to stabilize the flavors.
Storage: Store in an airtight container, in a dry place away from light. The dehydrated structure allows storage over several years without loss of aromatic density.
