Biotope

A preserved terroir at the heart of eastern Crete: this extra virgin olive oil is the fruit of a lineage of ancestral trees flourishing in the Mirabello region, in north-eastern Crete. This island microclimate — bordered by the sea, marked by maximum sunshine and arid limestone soils — imposes a natural resilience on the olive trees. It is this alliance of rock, sea air and the complete absence of intensive irrigation that compels the plant to concentrate its aromas and its essential nutrients at the very heart of the fruit.

Harvest

The pure expression of the Koroneiki variety: drawn exclusively from the Koroneiki variety, celebrated for its longevity and its aromatic density, this oil comes from an early harvest. The olives are picked by hand at their green stage of maturity, then taken to cold mechanical extraction within hours of picking. This process yields an extremely low acidity and fixes the native polyphenols.

Packaging

A protective stoneware vessel: to preserve the integrity of this cru, the oil is packed in an artisan stoneware bottle of 200 ml. This noble, entirely opaque material offers absolute protection from heat and light — far superior to conventional glass — shielding the aromatic molecules and delicate fatty acids from any alteration over time.
