Location and Growing Variables

Biotope

Located in the Sul de Minas region, Fazenda Lagoa benefits from a clay-mineral soil and an average altitude of 1,100 meters. This terroir is marked by a regular rainfall cycle and moderate temperatures, allowing an even ripening of the coffee drupes.

Harvest

Selective harvesting in successive manual passes. Only fruit that has reached complete physiological ripeness is retained, ensuring maximum residual sugars before the post-harvest phase.

Technical Data and Processing

Processing

Semi-washed processing (‘Pulped Natural’). The skin is removed, but part of the mucilage is kept during sun drying. This hybrid process combines the aromatic clarity of washed coffees with the syrupy structure of natural methods.

Stability and Sorting

Subjected to the rigorous Cup of Excellence protocol, the lot undergoes multiple densimetric and colorimetric sortings. This calibration eliminates any bean showing structural defects or early oxidation.

Composition

A high concentration of trigonelline and organic acids (citric and malic), preserved by precise roasting that avoids carbonizing the surface sugars.

Brewing Parameters

Extraction: Water temperature: 92°C to 94°C. This coffee expresses its complexity both through gentle methods (filter), highlighting the floral notes, and as espresso, concentrating the chocolate structure.

Ratio: For filter extraction, 60 g of grounds per liter of filtered water. For espresso, a 1:2 ratio (18 g of coffee for 36 g of beverage) saturates the solution with essential oils without upsetting the balance of the acidity.
